Spetzels  (Noodles)

This is Nellie (McDowell) Allen's recipe in her own handwriting.  She wrote it out for niece Della Ann Mikesell Binder.  It is a family favorite.  Della stewed chicken parts then dropped the spetzels in the broth to cook.

 
Spetzels (Noodles)
4 whole eggs
4 Tablespoons canned milk
1/4 teaspoon salt
[Add] flour enough to make [it] quite stiff and dip knife in boiling liquid. Pour dough over [the] side of [the] pan & cut [it] off. Cover and cook 10 or 15 minutes [in] chicken broth or beef broth or just plain salt water, makes good liquid to cook them in.  
 
 
 
 
 
 

Cod- Mock Lobster  (Really good!)  
Bev Binder Baker brought this recipe back from her trip to Norway.
 
Ingredients:
Chunks of Cod, thawed
3 quarts boiling water
1 cup salt
     Drop Cod into boiling water -  don't boil, just simmer 3-4 minutes. Drain and if too salty, rinse with hot water.  Pour melted butter over Cod & serve.

Strawberry Flavored Rhubarb Refrigerator Jam
 
This is Florence Allen Mikesell's recipe in her own handwriting  You will probably eat it all before it can spoil in the fridge.
 
 
 
 
Strawberry flavored Rhubarb Refrigerator Jam
 
Cook 3 cups of cut up rhubarb with very little water.
Add 1 1/2 cups sugar, bring to a very good boil.
Remove from heat and add one package of strawberry jello.  Let cool then place in refrigerator. 
 
Mom wrote "It tastes real good to me" and as a child, I always thought it did too.  Leslie 

Heavenly Pink Salad

This is a recipe requested often for special occasions.
 
Cream together:                
2 pkgs cream cheese         
1 1/2 cups sugar               
Add 1 lg  frozen strawberries
2 -8oz Cool Whip
1/2 cup chopped walnuts, refrigerate for 1 hour.
                

 

 

 

 

 


PINEAPPLE CARROT CAKE

recipe from Bev Binder Baker

 Ingredients:

 
2 CUPS FLOUR

2 TEASPOONS BAKING SODA

[You can add 1 & 1/4 tsp. salt here, but I never add salt to anything I bake because of the salt in the soda.]

2 TEASPOONS CINNAMON

4 EGGS

2 CUPS SUGAR

1 CUP OIL OR MELTED BUTTER

2 CUPS GRATED CARROTS

2 CUPS CRUSHED PINEAPPLE (DRAINED)

1 CUP WALNUTS OR FRESH COCONUT

SIFT TOGETHER DRY INGREDIENTS; SET ASIDE. MIX EGGS, SUGAR, AND OIL, STIRRING WELL. ADD CARROTS, PINEAPPLE, AND NUTS; BEAT AFTER EACH ADDITION. ADD SIFTED INGREDIENTS; STIR WELL. POUR INTO GREASED AND FLOURED 9X13-INCH PAN. BAKE AT 350

DEGREES FOR 40 MINUTES.

 FROST WITH WHIPPED-CREAM ICING OR CREAM-CHEESE ICING.

YIELD 6 SERVINGS. (ACTUALLY IT MAKES MORE THAN 6 SERVINGS)


Yum Yum Cake

This is my favorite easy Chocolate Cake.  Leslie Mikesell Wood

Ingredients:
 
1 1/2 cups flour
1 cup sugar
3 Tablespoons cocoa
1 teaspoon baking soda
1 cup cold water
1/2 teaspoon salt
5 Tablespoons vegetable oil
1 Tablespoon vinegar
1 teaspoon vanilla
     Heat oven to 350 degrees.  Measure flour, sugar, cocoa, baking soda and salt into a cake pan and mix well.
 [The pan does not have to be greased.] 
 Make 3 holes in the dry mix.  Measure the vegetable oil in one hole, the vanilla into another and the vinegar into the third.  Pour the water over all the mixture and stir.  Be sure all lumps are stirred out of the dry mix.  Bake 30 minutes.

            Huckleberry Cake        Delicious!!!!    Linda Binder     

           Mix together:                                     
          1 1/2 cup flour                                               
          2/3 cup sugar
          2 teaspoons baking powder
          1/2 teaspoon salt
          1/3 cup milk
          1 egg
          3 Tablespoons melted butter
          1 teaspoon vanilla
          Add:
          1  1/2 cups fresh or partially thawed huckleberrys
          Bake at 400 degrees about 40 minutes in greased 8x8x2" greased pan.

Huckleberry Cheesecake In a Glass

 Ingredients:

1 package (8 ounces) cream cheese, softened
3/4 cup confectioners' sugar
1/2 cup sour cream
1/2 teaspoon vanilla extract
1/2 cup heavy cream, whipped
1 cup graham cracker crumbs
1/4 cup (1/2 stick) butter, melted
1/4 cup granulated sugar
2 pints fresh huckleberries or blueberries, rinsed and patted dry

Procedure:
In a medium bowl, combine the cream cheese, confectioners' sugar, sour cream, and vanilla, beat until smooth. Fold the whipped cream into the cream cheese mixture until well combined.

In a small bowl, combine the graham cracker crumbs, melted butter, and granulated sugar, mix well.

Distribute half of the crumb mixture evenly over the bottom of 6 to 8 parfait glasses or dessert dishes. Layer half of the blueberries over the crumbs, then half of the cream cheese mixture over the blueberries. Repeat the layers and serve immediately, or cover and chill until ready to serve.

Brownie recipe

        Here's a recipe to make Mom's famous brownies!


     Remove teddy bear from oven and preheat oven to 375.

     Melt 1 cup margarine in saucepan.

     Remove teddy bear from oven and tell Jr "no, no."

     Add margarine to 2 cups sugar.

     Take shortening can away from Jr and clean cupboards.

     Measure 1/3 cup cocoa.

     Take shortening can away from Billy again and bathe cat.

     Apply antiseptic and bandages to scratches sustained while removing shortening from cat's tail.

     Assemble 4 eggs, 2 tsp. vanilla, and 1-1/2 cups sifted flour.

     Take smoldering teddy bear from oven and open all doors and windows for ventilation.

     Take telephone away from Jr. and assure party on the line the call was a mistake. Call operator and attempt to have direct dialed call removed from bill.

     Measure 1 tsp. salt, 1/2 cup nuts and beat all ingredients well.

     Let cat out of refrigerator.

     Pour mixture into well-greased 9x13 inch pan. Bake 25 minutes.

     Rescue cat and take razor away from Billy.

     Explain to kids that you have no idea if shaved cats will sunburn.

     Throw cat outside while there's still time and he's still able to run away.

     Frosting--Mix the following in saucepan: 1 cup sugar 1 oz unsweetened chocolate 1/4 cup margarine.

     Take the %$$&#&% teddy bear out of the @#$% broiler and throw it away -- far away.

     Answer the door and meekly explain to nice policeman that you didn't know Jr had slipped out of the house and was heading for the street.

     Put Jr. in playpen.

     Add 1/3 cup milk, dash of salt, and boil, stirring constantly for 2 minutes.

     Answer door and apologize to neighbor for Billy having stuck a garden hose in man's front door mail slot. Promise to pay for ruined carpet.

     Tie Billy to clothesline.

     Remove burned brownies from oven.
